Brett Holliday - Chef
We should really call Brett a captain, because he is equally qualified to be called one, but he is currently working as our onboard Chef, and talk about someone with hidden talent!
Brett started back in 2005 doing some guiding for us, and has spent many months guiding people around the Coral Sea and great Barrier Reef for Nomad Sportfishing. But he happenned to mention one day that he is also a chef, but had stopped working in commercial kitchens so he could spend more time on the water.
Anyway, the short story is that as well as being our chef he is also a very experienced and talented fisherman, which probably has something to do with the way he cooks seafood. It would be fair to say that Brett has a way of cooking fish, and other seafood, that makes it taste infinitely better than it has any right to taste. Brett is hands down the most professional and talented chef we have ever been lucky enough to have onboard our mothership, and you can be sure that he'll make your trip a complete culinary joy.
